If you want to keep cookies under control, you should look at the Block Cookies custom filter. 1Blocker prevents Safari from sending cookies to any website added to this category.
Cookies are small files generated by sites you visit stored on your device. Usually, sites use them to ease your navigation, let you log in automatically, or remember your settings, but at the same time, cookies can be used to collect your personal information, track your browsing history, etc.
So, if a website looks suspicious, perhaps it is worth blocking cookies on it.
The important thing to know about cookie blocking is that websites still save them to your device. However, if a site is included in the Block Cookies filter, Safari will ignore them while connecting to that site.
How to block cookies
On iOS:

First-party and third-party cookies are both used to track and store information about a user’s activity, but they differ in who sets them.
First-party cookies: set and used directly by the website you’re visiting.
Third-party cookies: set by external domains and services and are often used for tracking and advertising across different sites.
