If you want to keep cookies under control, you should look at the "Block Cookies" section. 1Blocker prevents Safari from sending cookies to any websites mentioned in this category.
Cookies are small files generated by websites you visit and stored on your device. Usually, sites use them to ease your navigation, let you log in automatically, or remember your settings, but at the same time, cookies can be used to get access to your personal information, track your browsing history, etc. So if a website looks suspicious, perhaps it is worth blocking cookies on it.
The important thing to know about cookie blocking is that websites still save them to your computer. However, if you have cookie blocking rules enabled, Safari would ignore them while sending requests.
